What time do Westhampton Beach's newest food businesses lock their doors? Going by the hours they published at opening, the answer for most of them is mid-afternoon. PopUp Bagels at 130 Main Street was listed at 7 a.m. to 4 p.m. daily when it opened in June. Brody's Coffee, a few doors away, listed 7 a.m. to 3 p.m. on weekdays. This year's arrivals put a lot of new coffee and bagels into the village's mornings.
Evenings tell a different story. Only one 2026 newcomer serves into the night. The other is a dinner-focused restaurant going into the most storied counter on Mill Road, and the last public report on it, from mid-August, said it had not opened yet. Its full liquor license application was still listed as pending in New York State Liquor Authority data updated October 5, 2026.
The hours below are what each business published or what Newsday reported around opening. None of the four has announced a separate fall or winter schedule, so this is a baseline, not a promise for January.
| Business | Address | Opened | Hours as published |
|---|---|---|---|
| Brody's Coffee | 115B Main Street | Memorial Day 2026 | 7 a.m.–3 p.m. Mon–Fri; 7 a.m.–5 p.m. Sat–Sun |
| PopUp Bagels | 130 Main Street | June 12, 2026 | 7 a.m.–4 p.m. daily |
| WHB Brew & Grille on Main | 115A Main Street | Open by June 14, 2026 | Noon–10 p.m. Sun, Tue–Thu; noon–11 p.m. Fri–Sat; no Monday hours listed |
| Galley | 162 Mill Road | Not yet open | 9 a.m.–9 p.m. targeted in April, depending on staffing |
Line the hours up and the pattern is clear. Three of the four open at 7 a.m. or are planning a morning start. By 5 p.m. on a Saturday, the only new place still open is the Brew & Grille. Today is a Monday, and the Brew & Grille's location page lists no Monday hours at all. That means none of the year's new openings has published Monday evening hours.
PopUp Bagels was the most closely watched of the group. It's founder Adam Goldberg's chain, and Southforker reported that the Main Street shop is a permanent brick-and-mortar location. "They're here to stay," that coverage said. Spark Hamptons' June roundup called the brand's East End launch "limited-run." Neither outlet published off-season hours, so the 7-to-4 schedule is still the latest figure on record.
The clearest picture of the village's day-and-night split is a single address. 115 Main Street, the former Daphne's space, now holds two businesses with one manager. Vincent Greco runs Brody's Coffee on one side and manages the Brew & Grille on the other. The Brew & Grille is owned by Brian Sckipp and John Salvaggio of Westhampton Beach Brewing. The addresses settled into 115B for the café and 115A for the pub.
Brody's is a dog-friendly café. Back in March, Greco told Southforker he planned to stay open "a little later than your typical coffee spot." By June, the Long Island Times reported that lunch service and more patio seating were expected "as the season progresses." Even with those plans, the weekend close Newsday listed was 5 p.m. The building's evening hours sit next door.
The Brew & Grille is where the newcomers' calendar runs past dark. In January, the owners told Southforker they would use heat lamps to "extend the seasons to the outdoor areas." The restaurant's online calendar lists events for Halloween on Saturday, October 31, from 11 a.m. to 11 p.m. and for Thanksgiving Day, Thursday, November 26. It also lists Christmas Day and New Year's Eve gatherings. Those are planned events, not a stated year-round schedule, but they're the most specific holiday commitments any 2026 newcomer has posted.
The pub is the brewery's second location. The original brewery and taproom are at 220 Rogers Way, Suite i, in the industrial park at Gabreski Airport. The Main Street spot brought the same beer into the village center, within walking distance of the Main Street shops.
The fourth address belongs to the oldest story. Eckart's Luncheonette opened at 162 Mill Road in 1911 and ran for 115 years under four generations of the same family. The family announced in January that February 17 would be the last day. In the end, the doors stayed open until March 22.
The reason was succession. "They can't work anymore," Danielle McClain told 27east, speaking of the older generation. "My younger cousins are too young to make a decision about whether they want to do it, it would be another 10 years or more, and I'm the only one here." The family's announcement put it more gently. "It is best for our family and we are leaving you in good hands."
Those hands belong to Will and Johanna Pendergast of Little Gull Cafe, the breakfast-and-lunch spot in the decommissioned Speonk LIRR depot. Little Gull opened there in 2021 and became a Newsday Top 50 restaurant. Newsday reported that local investors bought the Mill Road building and brought Will Pendergast in as a partner.
Pendergast's description of the new place is the most important detail for anyone tracking evening options. "In Westhampton Beach we will focus on dinner and drinks and also do breakfast and lunch," he told Newsday in April. "We don't want to draw business away from Little Gull." He also cited Little Gull's cramped kitchen. "When we get deliveries in the morning, we often have nowhere to put them!"
So the counter that served Westhampton Beach breakfast for a century is coming back as the one 2026 project built around dinner.
The project is now called Galley, and its timeline has moved more than once:
No public report through early October confirms an opening, a soft opening, or a new target date. Little Gull's website still lists only the Speonk café. The SLA file is the most current public sign of where things stand. Anyone tracking the opening can check the pending-license dataset at data.ny.gov and watch for the application to show up as active.
The plans are specific. They call for seafood and local produce, lobster rolls and scratch-made bread, with what Pendergast calls "that New England-style seafood shack vibe." Pendergast told 27east the menu will include full-belly fried clams, and that "there will be some Eckart's throwbacks, and we'll still do breakfast." Long Island Wave said the renovation is closer to a refresh than a gut job, with new flooring, paint, and a new bar top.
Put the published hours on one fall weekday and this is how the new openings line up:
Once Galley opens, it would be the second new evening option and the first with Main Street's evening hours on Mill Road. Until then, the Brew & Grille at 115A Main Street is the only 2026 newcomer serving dinner.
